  • ¼ cup coconut oil + 1 tsp
  • 2 Gala apples cored and chopped
  • ¼ cup maple syrup
  • ¼ cup unsweetened vanilla almond milk
  • 1 tsp cinnamon
  • ¼ cup peanut butter
  • ½ tsp vanilla extract
  • 2 cups quick-cooking oats

  • Heat 1 tsp coconut oil in a medium pan. Add apples and cook until softened and slightly caramelized, about 8 minutes. Spoon apples into a large mixing bowl.
  • In the pan, bring ¼ cup coconut oil, maple syrup, and almond milk to a boil. Stir in cinnamon. Remove from heat and add mixture to mixing bowl.
